Emmental — A Wheel of French Cheese with Eyes
Made in wheels over three feet in diameter, with large holes, or eyes, and a sweet aroma and taste. Emmental is a cooked and pressed cheese with a firm ivory to pale yellow pâte. Traditionally made with raw milk, a pasteurized version is available in the US.

Production and Aging: Cooked and pressed, aged at least one month
Appearance: Hard, yellow or brownish rind and pale yellow pâte with large holes (¼” to 1¼” in diamter)
Texture and Taste: A smooth, medium-hard paâte with a light, sweet, slightly salty taste
Serving suggestions: Pair with white or light red wines from Southeastern France
